Fortification of yoghurt with different types of fruits to improve its palatability is a commercially attractive technology. The results obtained with the study using papaya pulp at three different levels showed a slight enhancement in proteolytic activity and growth rate of yoghurt cultures as the percentage of fortification was increased. No adverse effect was noted with flavour production also. The only drawback noted was a slight reduction in its acceptability as the fortification level was increased to 20 per cent. However, no significant difference was noted indicating a higher dietary value for papaya added to fruit yoghurt.

Whey based mango beverages were prepared from the variations in the proportions of sugar and whey and were tested for its quality by sensory and physico-chemical methods. The specific proportions of sugar and whey were designed using Central Composite Rotatable Design (CCRD). It was observed that sensory flavor and overall acceptability (OAA) scores of mango beverage varied from 6.23 to 8.76 and 6.96 to 7.95, respectively. The difference in the sensory scores for respective attributes were highly significant (P≤0.01). The beverage containing 12% sugar and 20% whey resulted in 17° Brix and 48.57 to 51.52 TSS-acid ratios, which were the best in terms to their flavor and overall acceptability. Sensory data were regressed against sugar (X) and whey (Y) for second order polynomial methods, which were found to be adequate as coefficient of multiple determinants (R² wsa more than 80%.

Potential of chemical clarification of sugarcane juice was assessed using Response Surface Methodology (RSM). The proportions of gelatin, tannin and citric acid were estimated by Central Composite Rotatable Design (CCRD) for the adequacy of clarification characteristics which were measured in terms of colour and turbidity of sugarcane juice. Minimum turbidity was observed from the addition of 12.20 mg per cent gelatin, 8.48 mg per cent tannin and 0.58 g per cent citric acid. After regressing and analyzing, the optimum proportion for maximum reduction of color and turbidity was observed as 12.26 mg per cent gelatin, 9.10 mg per cent tannin and 0.59 g per cent citric acid respectively.

Pomegranate arils were stored using different storage methods and packaging materials. The polyethylene of 100, 200 and 300 gauge was used as packaging material. the packed samples were stored in deep freeze (-15°C), freeze (4°C) and at room temperature (27°C. The results of study showed that the weight loss was maximum in case of unpacked as compared with packed samples. The weight loss in case of deep freeze, freeze and at room temperature varied between 0.6 to 1.1, 0.2 to 2.2 and 2.0 to 9.2%, respectively. The shelf life of arils was found maximum in deep freeze (54 days) followed by freeze (15 days) compared with storage at room temperature (4 days). The fresh pink colour and firmness of frozen arils was observed even after 54 days of storage at -15°C.

Attempt has been made for wet flue gas de-sulfurization using water as the absorbing medium in a newly design scrubber. Prediction of SO2 removal efficiency is very important for selection of a pollution control equipment. Reports on the detailed experimental investigations on the scrubbing of SO2 in the Modified Multi-Stage Bubble Column Scrubber (MMSBCS) using water. Experimental results show that almost 100% removal efficiency of SO2, can be achieved in the present system. A correlation has been developed for predicting the percentage removal efficiency of sulfur dioxide. Experimental results are in excellent agreement with the correlation.

Guava powder was prepared by osmo-air drying technique from the newly developed guava hybrids H-25-25, H-11-7, H-3-22 and from existing commercial cultivars i.e. Lucknow-49 and Allahabad Safeda. The blanched slices were immersed in 70°B sugar syrup at 50°C overnight and dried at 60-65°C, in a Cabinet drier. Dried slices were ground to powder and its quality was evaluated during storage. Powder prepared by osmo-air drying technique was found better in quality than drying in oven without any osmosis. Among various hybrids and cultivars evaluated, hybrid H-3-22 was found superior followed by H-11-7 on the basis of colour (less browning), low tannins, good pectin content, high product recovery and ascorbic acid content. During storage, a significant increase in reducing sugars, moisture, pectin, browning and decrease in ascorbic acid and tennins was observed.

Effect of packaging materials (cardboard box, brown paper bag and polyethylene bag) and storage period (6 months) on moisture content, ascorbic acid, ash content and organoleptic properties of spinach beet was studied. The quality and stability of dehydrated products was assessed during storage. Increase in moisture was found minimum (2.20%) in case of 400 gauge polyethylene bag and maximum in case of cardborad box (10.61%). There was minimum loss in ascorbic loss in ascorbic acid and ash content of 5.17 mg/100 g and 3.5%, respectively in case of polyethylene bag (400 gauge). Whereas maximum loss of ascorbic acid (9.81 mg/100 g) and ash content (5.5%) were observed in cardboard box. Dehydrated spinach beet packed in 300 and 400 gauge polyethylene bag could be stored for 6 months at room temperature. Dehydrated spinach beet products prepared by using cold and hot brining treatments were found to be more stable products.

Biogenic amines viz., putrescine, cadaverine, histamine and tyramine, preset in fresh, canned and salt-dried fishery products of Indian origin were analysed by means of TLC - densitometric method. Fresh fish and canned fishery products did not contain appreciable amounts of amines. On the other hand, salt-dried fishery products contained very high levels of biogenic amines. The histamine content in about 17% of the samples was above the maximum allowable limit of 20 mg%. Presence of potentiating amines, viz., putrescine and cadaverine in higher concentrations reflects that poor quality raw material was used for curing process.

Total of 10 brands of Malaysian fish balls were analyzed for physiochemical properties like colour, cooking effect, proximate composition and texture (folding test). Results showed that there was a wide variation in the amount and types of ingredients used in producing the different kinds of fish balls. The weight of samples analyzed ranged between 6.25 - 15.14 g with price varying from US $ 1.97-3.62/kg. The colour value for lightness (L) of fish ball varied significantly (p<60>0.05), ranging from 62.14-76.85. Different brands of fish balls exhibited different cooking effect, which ranged between -11.06% and +8.21%. All samples showed AA grade in folding test, which indicated that the texture of fish balls was acceptable to consumer.

The results for the first order reaction agree well with the analytical solution. Numerical results have also been validated with reported experimental data for reduction of Magnetitite by CO. The effects of different process parameters on the progress of reaction have been assessed.

In case of soy-rasogolla the threads were of different sizes, varying from thin to thick (broad), but in case of cow milk rasogolla they were much more uniform.

Ability of filamentous fungi to secrete extracellular proteins motivates their extensive use for production of enzymes. Most enzymes are usually produced by batch submerged aerobic fermentation process. The complexity of biological systems and the lack of suitable on-line sensors for key process variables have rendered the on-line control of enzyme production processes extremely difficult. Inference of important biological process variables from existing one-line measurements provides a means of effective supervision and control of these production systems. Artificial neural network models offer a novel solution in such situations. Neural networks can learn essential process non-linearities and provide a means to assist on line estimation of biological activity. The investigation was undertaken to examine this prospect by considering the batch fermentation process for the production using Trichoderma harzianum in a laboratory scale fermenter.

Sulphiting agents such as sodium metabisulphite and sodium bisulphite are widely used in prawn processing factories to control black spot, but sensitive persons are allergic to these chemicals. Repeated washing with optimum volume of potable water helped to leach out polyphenoloxidase from prawn considerably. 92% of the enzyme was leached out in the first two washing in the case of headless shell-on prawn and 53% was leached out in case of shell on whole prawn.

Rate of heat penetration to the centre of fish piece (mackerel) during frying was studied at two selected temperatures of 120°C by inserting needle type thermocouple. Heat penetration rate to the centre of fish piece was slower at 120°C than at 160°C. At 120°C, centre temperature did not reach 100°C even after prolonged frying; whereas at 160°C, it crossed 100°C after 16 min of frying. Effect of variation in frying temperature and time on frying loss, moisture content and moisture loss of fried fish were studied in detail. biochemical changes in fish during frying and the oil consumption rate were estimated at four treatments viz., 120°C for 18 min, 140°C for 10 min, 160°C for 5 min and 180°C for 5 min. Parameters like moisture, crude protein, crude fat, total ash, salt, TVB-N, PV, FFA and caloric values were analysed. There was a sharp increase in TVB-N, TMA-N, PV and FFA content in fish during frying.

Work was undertaken to study the analyze the adsorption of a few model dyes on glass fiber. The adsorption equilibrium was found to dependend on the pH of the medium and the degree of removal was predictably dependent upon the adsorbent loading. In the case of Methylene Blue, for example, 74% removal of the dye from a 100 ppm solution was observed for 1% glass-wool loading at 30 deg C and pH 8.5 but the percentage removal reduced to 4.6% at a pH 4 of the solution. On the other hand, an increase of the adsorbent loading from 0.6% to 0.8% led to an increase in the percent removal from 40.5 to 71.2. Similar results were obtained with Malchite Green and 73% removal of the dye from a solution of 90 ppm initial concentration was observed for 1% was glass-wool loading. Unlike the above two basic dyes. Neutral Red. A weakly basic dye, was removed to the extent of 23.3% from an initial solution of the same concentration of the same loading. Thus strongly basic dyes are better adsorbed on glass-wool than their weakly basic or strongly acidic counterparts. Adsorption isotherms for Methylene Blue was a Langumuirian type. Freundlich isotherm could also be fitted languimuir isotherm for Methylene Boue fitted by least square square technique is as follows : q=7.68Ce/(2.04+Ce) for 1% loading with q and Ce having the usual meaning.

Aim of the work is to study the suitability of gram-husk as an effective adsorbent for some model dyes. The adsorbent, gram-husk, was procured from a local husking mill and washed repeatedly with warm distilled water till a colourless wash liquid is obtained. Then the adsorbent was dried at about 60-70 deg C. Model dyes used for adsorption studies are Congo Red, Rhodamine-B, Neural Red and Metanil Yellow. Adsorption experiments were done by putting a measured weight of adsorbent in a measured volume of the dye solution in a tightly stoppered, borosil glass battle and allowing the content of the bottle to attain equilibrium at a constant temperature over a period of 6 days. A control experiment was also performed in parallel. Presence of salt such as Na2SO4 was found to affect the adsorption isotherm as well as percent removal of dyes from solutions. In the presence of 500 ppm Na2SO4 removal of Congo Red is 37.7% with 0.6% adsorbent loadng but the degree of removal reduced at 22.2% in the absence of the salt. Adsorption isotherms generally follow Langmuir monolayer model. A reasonable fit using the Freuindlich equation was also observed. Langmuir isotherm fitted with least square method for adsorption of Congo Red dye on gram-husk adsorbent (3% loading) is as follows : q = 4.65Ce/(8.355+Ce).

Pilot plant study was conducted on hydrotreating of heavy vacuum gas oils over a commercially available NiO-MoO3/Al2O3catalyst to determine the possibility of utilizing hydrotreated vacuum gas oil as fluid catalytic cracking feedstock along with improved conversion and product qualities. Studies were conducted with high sulphur and high nitrog nous vacuum gas oils derived from Upper Zakkum and Escravos crude sources respectively. The hydrotreating experiments were conducted at 320-380°C, 50 kg/cm², 1.0-2.5 hr^-1 liquid hourly space velocity and H2/oil ratio of 300 lit/lit in a pilot plant trickle bed reactor. Hydrotreating of vacuum gas oils under typical operating conditions resulted in significant redution in sulphur and nitrogen content. The saturates were found to increase by 4-20 wt% in the range of operating conditions studied indicating good crackability of feedstock. The data obtained from pilot studies showed that the processing of hydrotreated vacuum gas oils in fluid catalytic unit will result in higher conversion and better quality fuels.
