Freezing icecream and its subsequent hardening are two most important operations in making ice cream on which quality, palatability and yield of finished products are dependent. During freezing of ice cream the thermophysical properties of the mix and subsequent ice cream changes as a function of temperature. Two of the most important properties, namely, thermal conductivity and viscosity have been determined at different temperatures. A device has been developed by which the thermophysical properties of liquid or solid food materials, suchas ice cream at different temperatues can be measured. Thermal conductivity of ice cream was determined using line heat source method based on unsteady state heat conduction. Viscosity of ice cream was determined with the help of a Brookfield viscometer. Thermal conductivity of ice cream was found to vary between 0.738 to 0.587 W/m°C in the temperature range of -2 to -32° C and viscosity was found to vary between 2x10⁵ to 41x10⁵ c.p. in the temperature range of -1.6 to -15° C.

The study describes quantitatively differnet quality attributes on which it can be inferred that the cryogenic grinding enhances the quality of the ground spices compared to that ground conventionally.

Jasmine is a delicate flower. It is very difficult to keep its freshness beyond several hours. Studies were made on storage under NA and MA at different temperatures. Different packaging films and also chemicals were used to extend the storage life of jasmine. Active modification of package atmosphere by introduction of N₂ and CO₂ were also tried and useful results were obtained. It was found that Polyethylene laminated Al foils are the best packaging material and at 8+2° C temperature, 85% RH jasmine can be stored upto 4-5 dys in good condition.

Titanomagnetite is one of the important source of iron, titania and vanadium. The possibility of recovery of valuable fractions depend on mineralogical and geo-chemical characteristics of the ore. An ilmenite enriched fraction can be separated from magnetite by dry magnetic separation. The particle size has some effect on the separation of magnetic and non-magnetic fraction. The ilmenite enriched non-magnetic fraction is further processed to liberate titania by roasting using different reducers like dextrose and charcoal. X-ray diffraction (XRD) studies indicate presence of free Ti₂O₃ in the roasted product. Efficiency of liberation of titania changes with roasting temperature as well as with type of the reducing agent. The charcoal shows poor reducibility as compared to dextrose.

Selected commercial dyes were treated with hypochlorite and ozone as oxidizing agents. The effect of pH, temperature and time on the treatment process were investigated. Rate extent of color removal was determined spectrophotometrically and TOC was measured too. It was found that, at room temperature, ozone completely decolorized dyes solutions in a relatively short time period while hypochlorite removed the color at a rate of 30:100%. Also, ozonaion lowered the pH and raised the conductivity.

The good resuls obtained by cast iron iwth Cr and cr-Ni investigated in the making of part for pumping equipment in sugar cane industry are given. Cast iron alloy coupons were prepared in order to study their hardness, resilience, corrosion resistance, and wear-out behaviour by means of simulating the conditions found at the sugar industry processes. Microstructural characterisation of alloys was made by scanning electron microscopy (SEM), and the electrochemical trials in order to assess corrosion susceptibility were performed with a specific sugar solution. The behaviour of alloys to wear - out and corrosion depends mainly on the chemical composition and effect fo the alloying elements the foramtion of carbides during solidification, and the persence of impurities and inclusion at a surface level. The results enalbled selectionof better alloys, which can be employed at the sugar industry such s 0.78, C-33, 5 Cr-7.7 Ni which have a highchromium conjtent. This implies a considerable economic saving for sugar industry.

Wine from strawberry (fragaria ananassa), an imporant temperature fruit, was prepared using three cultivars and by four different methods, and matured for 9 mo. The maturation resulted inan increase in reducing sugars, total estes and volatile acidity and a decrease in total soluble solids, total sugars, titratable acidity, colour, anthocyanine and total phenols. All the three cultivars followed this trend in all the characteristics except volatile acidity. Differences in changes of different characteristics during various intervals were also recorded. The wines maintained their original differences even after maturation. Most of these changes were similar to those observed in red grape wine and the values obtained after maturation remained within the range normally observed in such wines. These changes increased the palatability of wine and thus, desireable. In general, the maturation of wine improved sensory quality of strawberry wines, irrespective of the method followed and the cultivar.

Investigation was carried out on the influences of two different preservatives viz. sodium and potassium metabisulphites (1000 ppm onthe basis of milk) on chemical, microbiological and sensory changes in cow milk burfi packed inlwo density polyethylene pouches (Thickness : 40 micron) and stored at ambient (30<144 C and 70% RH) and rrefirgerated (7°C and 90% RH) temperatures. Irrespective of temperature of storage, addition of the two preservatives to cow milk burfi during its preparation helped in lowering down the rate of increase of titratable acidity, suppressed microbial growth and retarded deterioration of organoleptic quality, though the deterioration was faster at ambient condition. Cow milk burfi samples treated iwth sodium and potassium emtabisulphites, individually, were found acceptable upto 25 days at 30° C and 60 days at 7° C storage.

Sudies were conducted to determine the availability of limiting amino acids (iysine and methionine) in the UDP fraction of commonly used protein sources. the feedstuffs, Soyabeen extraction(SBE), Rapeseed extraction(RSE), Sunflower extraction(SNFE), Maize gluten meal(MGM),Safflower cake (SFC)and copra cake (CC) contained 2.59 and 1.00;0.80 and 0.35;1.11 and 0.19;1.01 and 1.25;1.17 and 0.44 and 0.21 and 0.21 per cent lysine and methionine, respectively, which were determind by HPCL.The above feedstuffs were incubated in nlylon bags in the rumen of three fistulated crossbred steers for a period of 24 hour. the lysine and methionine disappearance from these feedstuffs during 24 hour incubation in the rumen were 94.21 and 92.07;69.97 and 76.60;41.99 and 89.81;62.89 and 67.64;30.25 and 13.16 and 58.57 and 68.05 per cent in SBE,RSE, SNFE, MGM, SFCand CC respectively. It was observed that the bypass protein fractions of safflower cake and maize gluten meal are good sources of lysine and methionine and the bypass protein fractions of sunflowercake and copra cake are good sources of lysine. the lysine and methionine availability in the UDP fractions of soyabean extraction was vary low as these amino acids are extensively degraded in the rumen.

Formation of precursors for ceria by two homogeneous precipitation reactions-(certium chloride + urea at 95°C-called reaction A and cerium chloride + hexamethylenetetramine at 85°C-called reaction B)- has been studied. The variation of size of the colloidal particles formed and the zeta potential of the suspensions with progress of reactions exhibnited similar trends for both the precipitation processes. Particles size increased from 100 to 300 nm with increasing temperature and extent of raction. The zet potential was found to decrease with incresing extent of precipitation in the pHrange of 5 to 7. Filteration and drying led to agglomeration of the fine particles in case of the precursor from reaction b. The as-formed precursors were crystalline-a basic carbonate in case of reaction A and hydrous oxide in case of reaction B. It was foun that nano-crystalline ceria powders (average crystallite size ~ 10 nm) formed above 400°C from both these precursors. the agglomerate size (D₅₀) of the precursors and ceria powders formed after calcination at 600°C varied from 0.7 to 3μm. Increasing calcination temperature up to 800°C, increased the crystallite size (50 nm). The zeta potential variation with pH and concentration of an anionic dispersant (calgon) for the ceria powders formed was studied to determine the ideal conditions for suspension stability. It was found to be maximum (i.e. the suspensions stable) in the pH range of 3 to 4 or calgon concentration of 0.01 to 0.1 weight percent.

Precursor powder for the preparation of mullite was synthesized through a non-conventional semi-colloidal technique. The precursor powder was characterized by chemical analysis, DTA , measurement of surface area, bulk density and X-ray analysis. The powder was compacted with TiOas additive in various proportions and the sintering of the compacted masses was studied by measuring the firing shrinkage, apparent porosity, bulk density and specific gravity. The phase development and phase distribution in the sintered masses were studied by XRD and SEM. It was observed that TiO exhibited a positive influence on the formation of mullite from the said precursor powder at elevated temperatures. The grain size of the mullite crystals increased with the increased in TiO content.

Manganese ore and its alloys play an important role both in the metallurgical and non-metallurgical inductries. Metallurgical applications probably account for 97-98% of the total manganese ore consumption while the rest is being used in the manufacture of dry cell batteries and chemicals. Ferro alloys are essential additive material in alloy steel production and they are produced by variety of processes, including blast furnace, electric arc furnaces and thermic fusion processes. Ferromaganese forms the major portion of the ferro alloy production. Production of ferromanganese is mostly done by smelting in submerge arc furnaces, and is then treated according to type of ore, quality and process requirement, based on the chemistry of the process. It is very difficult to maintain the quality, purity and type of the final product. Mixture of different type of ores also plays a significant role in production of ferro-manganese since the source and type of manganese ore are enormous. To prepare a cost-effective initial mixture several simultaneous algebric calculations are necessary. Thus, a computer based technique has been developed for preparation of initial mix for Fe - Mn production, which helps in studying the factors influencing the process, and the yield with a minimum cost.

Urea coated with 10% (of urea-N) karanjin employing 5% of ethanolic extracts of Pongamia glabra or Azadirachta indica A. Juss (neem) seed kernels as coating aids, revealed over 40% inhibition of nitrification by the 45th day over urea alone in laboratory incubation studies employing typic Ustocrept soil. Nitrapyrin alone was superior in this respect causing 67% inhibition at 5%level. Both the ethanolic extracts were superior to coal tar as coating aids for karanjin, with neem extract imparting better persistence. Karanja oil was not effective.

Nanocrystalline CdS particles with a size range of 8-30 nm and mean size of about 14 nm were synthesized following an water in-oil type emulsion technique at 80°±1°C under mechanical agitation and sonication. An ionic impurity-free nonionic surfactant of high hydrophilic-lipophilic balance (HLB) value of 15, i.e. , polyoxyethylene sorbitan monooleate (Tween 80), was used as the emulsifying agent. The effects of Cd²⁺ ion concentration, mechanical agitation, sonication and calcination temperature on particle formation were examined. The synthesized particles were characterized by transmission electron microscopy (TEM) , particle size analysis, X-ray diffaraction (XRD) and photoluminescence (PL) study. TEM indicated the formation of nanozied particles. In the absence of mechanical agitation during particle formation,submicrometer-sized particles with a bimodal distribution were noticed,while in the absence of sonications,larger particles of mean size 49 nm weredeveloped. cubic CdS peaks were identified by XRD in the synthesized powders.XRDalso indicated the crystallite size increased with the increase in calcination temperature and Cd²⁺ ion concetrations. Photoluminescence spectra of different samples indicated that with increasing concentration of Cd⁺² ions surface defect states are reduced.

Emulsion liquid membrane extractionhas been carried out to separate L-glutamic acid in a batch extractor. The emulsion is formulated by using kerosene as ssoslsvent, water as internal stripping phase, tri-ethanol amine as an emulsifier and oleic acid as carrier. The effect of emulsifier concentration on emulsion stability was studied and the maximum stability of emulsion was obtained for an emulsifier conccntration of 1.0 per cent (v/v). The percentage reduction of amino acid (solute) in external phase was significantly affacted by the parameters such as emulsion to external phase (M/E) ratio, agitator speed, emulsifier concentration and pH of both external and internal phase. The maximum solute reduction of 66.0 per cent (v/v), an agitator speed of 150 rpm, emulsifier conc of 1.0 per cent (v/v), carrier conc of 4.0 per cent (v/v), pH of external phase at 4.0 and pH of internal phase at 7.8. The above emulsion system is found to be higly feasible than the emulssion system consisting of lubricating oil -0.5 M HCI solution and Indian glycol emulsifiers for extration of L- glutamic acid where the maxumum solute recovery of 63.5 oer cent was obtained for M/E tatio of 0.25 (v/v) at 150 rpm with external phase pH of 4.0.

Different material viz. alginate, K-carrageenan and polyacrylamide gels were examined for immobilization of whole cells of Bacillus spp. PE-11 and used for the production of alkaline protease. The effect of alginate concentration, incubation time and curing time on alkaline protease production and stability of biocatalyst were investigated. The immobilized cells of Bacillus sp. PE-II in calcium alginate are more efficient for the production of alkaline protease with repeat batch fermentation for 9 days.
