Noble metal powders (Au. Ag, Pt, Pd and Ru) have been synthesized by the polyol process in both the nanometer and submicron scales (scns Pd, Pt and Ru). They have been characterized by both microscopic (TEM and SEM) as well as spectroscopic techniques (FT-IR and XPS). Infrared spectroscopy was employed to study the colloid particles in the presence of ethylene glycol and PVP and the results show that the interaction between the organic phase and the metal particles vary according to the particles size. The role of the solvent, ethylene glycol, during the reduction process was also investigated and observe formation of>C=O vibration band after the reduction process implying that the solvent reduces the metal ions thereby getting oxidized. XPS measurements carried out on the colloidal sols have shown the presence of the organic phase adsorbed onto the metal particles.

InGaAs/InP quantum wells of widths varying from 19 A tp 150 A have been grown by MOVPE and the growth temperature optimized using photoluminescence and SIMS. It was thus found that for a 78 A well the lowest PL linewidth of 12-7 meV at 12K was obtained for growth at 625°C. SIMS also showed sharpest interfaces for this temperature compared with growth at 610°C and 640°C. The well widths determined from PL energies were in good agreement with a growth rat of 8.25 A/s. However, while the barrier widths of 150A were in agreement with SIMS results, the well widths from SIMS were found to be much larger, due to a lower sputtering rate of InGaAs compared with InP. Quantitative comparsion was made assuming the presence of InAsP and InGaAsP interface layers on either side of the wells and the relative sputtering rates determined.

Toffees were developed by using papaya fruit and milk powder. The toffees were stored for 9 months and storage studies were carried out at the end of 0,3,6 and 9 months storage. Physico-chemical, microbiological and organoleptic qualities were evaluated at the end of each storage period. Minimum changes were observed in physico-chemical, microbiological and organoleptic qualities. Significant changes were observed in non-enzymatic browning, moisture, total ash, total sugars, reducing sugars, vitamin C, total carotene, beta carotene and fat. On storage, the retention of vitamin C, total carotene and beta carotene was 38,47 and 49 per cent, respectively.

Among the three levels of carboxymethyl cellulose (CMC) used, sandesh samples prepared from milk treated with 0.08% CMC showed the highest scores for body and texture (7.4) and overall acceptability (7.5). Incorporation of CMC at the same rate by weight of milk improved the yield of channa upto 3.0%. Similarly, sandesh samples made from milk treated with 0.05% guar gum secured maximum scores of 8.11 and 8.20 for body, texture and overall acceptability, respectively. Therefore, from the sensory scores of sandesh, it could be concluded that the treatment of buffalo milk with guar gum produced better result as compared to CMC, whereas, the control or untreated sandesh samples secured the lowest ratings for body and texture including overall acceptability.

Molecular weight of the polymer, responsible for many of its properties, is determined by techniques like vapour pressure, osmotic pressure, scattering of light and viscosity. Describes a method of arriving at the molecular weight through the solvated part of the viscosity of the solution. The method developed was verified using the ultrasonic and viscosity data on aqueous PEG solution. Assuming that the additive property holds good for compressibility and viscosity of the polymer solutions as in the case of electrolytic solution, an equation for the viscosity of the solvated part (η) was derived. A mathematical equation corelating the viscosity of solvated part at any concentration and molecular weight of polymer (M_n) was suggested and was applied to the calculation of the molecular weight of unknown samples of PEG from their measured adiabatic compressibility and viscosity values.

Buffalo milk turns more brown compared to cow milk on severe heat treatment. In toned and standardised milk the browning index was very low as compared to boiled milk. At 1.05 kg/cm2 for 15 min. the browning index in all the milk samples increased moderately. However, at 1.05 kg/cm2 for 20 min the browning index increased rapidly. As the heating conditions increased, the ratio of available lysine decreased in all the heated milk samples. The loss in available lysine was very low in boiled milk and too high as milk heated at 1.05 kg/cm2 for 20 min. Lactose level progressively decreased with the severity of heating conditions in both cow and buffalo milk. However, this decrease in lactose level was only marginal as compared to the large progressive increase in browning index observed with the severity of heating conditions. Protein level also progressively decreased with the severity of heating conditions in both cow and buffalo milk. It was also observed that available lysine, lactose and protein level progressively decrease with the increase in total solids in both cow and buffalo milk khoa as a result of heat treatment.

Particularly, during the preparation of bi-metallic catalysts, the characterization of active component which is formed by the complexation of platinum salt and the second metal (promotor) salt is very crucial because at different molar concentrations different types of complexes of varying structures are formed and they need to be characterized spectroscopically before these are actually impregnated into the support. Further, the changes occurring in the charge transfer and d-d bands of these bi-metallic catalysts during drying, calcination and activation have been explained. Finally, the use of the technique in quantifying the oxidation states of the metals in catalysts has been discussed.

Counts of V. parahaemolyticus decreased in cooked prawns stored at 5, 10 and -20°C. Flow properties and physico-chemical characteristics of concentrates of `Perlette' grape juices extracted by cold, hot - and pectolytic enzyme-break were investigated. Flow behaviour was studied at 10° to 50° C over the shear rates of 0.6-145.8 s^-1. The rheological data were fitted to power law, Herschel-Bulkley and Casson models. The concentrates were mildly non-newtonian in nature. The values for flow behaviour index varied from 0.79-0.99. The consistency indices and yield stresses of the hot-break grape juice concentrates were considerably higher than those of the cold-break or enzyme-treated juice concentrates. The activation energy for the filtered juice concentrates were not significantly different than those of the unfiltered juice concentrates.

Physico-chemical, biochemical and sensory characteristics were studied on samples drawn at 15 days interval. Protein contents increased from 29 to 43 g %. while urea levels reduced from 1.51 to 1.12 mg %, found within the allowable limits. The samples kept well throughout the storage.

Kinema is a traditional fermented soybean food common to the Eastern Himalayas. Pulverised starter using selected strain of Bacillus subtilis KK2:B10 (MTCC 2756), previously isolated from traditionally prepared kinema, was developed for kinema production. Kinema prepared by Bacillus subtilis KK2:B10 strain, which was grown and harvested in soybean extract broth, was dried in an oven at 70°C for 10 h and ground aseptically. The 1% of pulverised starter was added aseptically to steamed soybeans and fermented at 40°C for 20 h under 85% relative humidity to get kinema. Load upto 6 months. The consumers' preference trials showed that kinema prepared by using pulverised starter was organoleptically kore acceptable than market kinema. Water-soluble nitrogen and formol nitrogen to total nitrogen contents were hgiher in kinema prepared by using pulverised starter than market kinema. Application of inexpensive and ready-touse pulversied starter may be appropriate for kinema processing at household level.

Physico-chemical bacterial and sensory quality of sticks prepared from hot deboned (un-chilled; ≤ 60 min post-mortem) or cold deboned (1 h slush ice + 4 h aging at 4±1°C) spent quail hen meat treated with or without 0.5% sodium tripolyphophate (STP) was evaluated under refrigerated (4±1°C; 80-85% RH) storage. Although the product showed significant (P<60>0.01) increase in percent weight loss with storage time, the differences between deboning and STP treatments were non-significant. Moisture, crude proteins and ether extracties of sticks, which averaged 68.5, 19.4 and 9.6% respectively, also did not differ significantly between processing treatments or storage periods. However, addtion of STP raised emulsion pH by about 0.30 unit, improved emulsion stability, inhibited lipid oxidation and restricted bacterial multipliction, resulting in the extension of organoleptically acceptable shelflife of the product upto 9 days, as against 6 days for samples without STP, regardless of deboning methods.

The barrier properties and morphological behaviour of the filled films have been reported. The variations in properties such as tensile behaviour, burst strength, heat seal strength and barrier properties on the incorporation of inorganic fillers has been discussed.

Physico-chemical, nutritional and sensory properties of rabbit, mutton and their combination (50:50) were compared for sausage processing. Mutton produced significantly (P<60>0.05) less stable emulsion than did either rabbit of combination of meats. The water holding capacity (WHC) of rabbit meat was superior (P<60>0.05) to that of mutton, while its fat content was lower (P<60>0.05), as compared to mutton or combination meat sausage. The mutton sausage was darker red and firmer (P<60>0.05) than the rabbit sausage confirmed by Hunterlab and Instron readings. Sensory evaluation for flavour and juiciness of rabbit sausages was comparable to combination meats and slight inferior to those of mutton. However, overall palatability scores were higher (P<60>0.05) in mutton sausage.

Copper naphthenate is outdated. Phenols, chlorinated phenols and phenoxy alcohols are most effective rot-proofing agents are revealed. Even non chlorinated phenoxy alcohol shows excellent rot proofing capacity and is ecofriendly.
